Vegan Banana Pancake

Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mashed banana (about 1 large banana)
  • 1/4 cup soy milk or other non-dairy milk
  • 1 tablespoon melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract

Instructions:
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the mashed banana, soy milk, melted coconut oil, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
  • Heat a lightly greased or non-stick skillet or griddle over medium heat.
  • Pour 1/4 cup of batter onto the hot skillet for each pancake.
  • Cook for 2-3 minutes per side, or until golden brown.
  • Serve immediately with your favorite toppings, such as maple syrup, sliced bananas, or fresh fruit.
