- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mashed banana (about 1 large banana)
- 1/4 cup soy milk or other non-dairy milk
- 1 tablespoon melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the mashed banana, soy milk, melted coconut oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
- Heat a lightly greased or non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of batter onto the hot skillet for each pancake.
- Cook for 2-3 minutes per side, or until golden brown.
