Kombucha Marinated Tofu Skewers


1 block of firm tofu, drained and pressed
1/2 cup kombucha 
3 tablespoons soy sauce
2 tablespoons maple syrup
2 tablespoons sesame oil
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon sesame seeds
1 tablespoon chopped green onions (optional)
Salt and pepper to taste
Bamboo skewers, soaked in water


  • Prepare the tofu: Start by draining the tofu and pressing out any excess water. Cut the tofu into cubes or rectangular pieces that are about 1 inch thick.
  • Make the marinade: In a bowl, combine kombucha, soy sauce, maple syrup, sesame oil, minced garlic, grated ginger, sesame seeds, chopped green onions (if using), salt, and pepper. Whisk everything together until well combined.
  • Marinate the tofu: Place the tofu cubes into a shallow dish or a resealable plastic bag. Pour the marinade over the tofu, making sure each piece is coated. Let the tofu marinate for at least 30 minutes to 1 hour, or you can refrigerate it overnight for maximum flavor.
  • Preheat the grill: Preheat your grill or grill pan to medium-high heat. If using bamboo skewers, make sure to soak them in water for about 15 minutes before using to prevent them from burning.
  • Skewer the tofu: Thread the marinated tofu onto the soaked bamboo skewers, leaving a little space between each piece.
  • Grill the skewers: Place the tofu skewers on the preheated grill and cook for about 5 minutes on each side, or until the tofu is lightly charred and crispy on the edges. Baste the tofu occasionally with the remaining marinade to enhance the flavor.
  • Serve: Once the tofu is cooked, remove the skewers from the grill and transfer them to a serving plate. You can garnish with additional sesame seeds and chopped green onions if desired. These skewers can be enjoyed as is or served with a side of dipping sauce.
  • Enjoy: Serve the Kombucha Marinated Tofu Skewers as an appetizer, a main course, or as part of a veggie bowl. They are deliciously tangy and make a great addition to any meal!

Note: Feel free to customize the marinade by adding other seasonings, tomato or spices that you prefer. Also, you can experiment with different flavors of kombucha to create unique variations of this recipe.
